  • 1. Be able to work efficiently, quickly and calmly under pressure
    2. Have good math skills
    3. Understand concepts of chemistry (you don’t have to know everything, just the ability to understand what chemical properties an ingredient might have and how those properties may interact with other ingredients to affect the final product
    4. Knowledge of food safety – both in preparation and storage
    5. You also have to have a good business sense and the ability to balance quality with cost control and remember you are working to please your customers, and not just yourself.
    6. Ability to get up before the crack of dawn and stand on your feet for long periods of time (oh, sorry – these are physical properties)
