I’ve decided that I want to be a pastry chef. It’s kind of a disappointment to my family since I’m the "shining" star of the three kids school-wise… Anyways, I hope to attend the Culinary Institute of America in Greystone, but I’m only 17 (and a junior in high school)… How should I prepare? I’ve been working for 8 months in a pizza parlour and plan on applying for a job in a grocery store bakery when I turn 18 in September. I won’t be graduating until 2010, so I can get a good amount of experience. What else should I do? Any advice?

what chemical we can apply or what method can be used in bake oven (electronic industrial) to reduce the odor formed by the oven.

This is pretty much my dream. I love to bake, and making cakes & other things beautiful just appeals to me. I’m a talented baker, not to toot my own horn but I do make amazing desserts. I plan on getting a Bachelors in Baking & Pastry arts, after Graduating high school in 2012. Anyways, this is what I want to do. How ever some recent discussions/arguments with my parents have gotten me to wonder. I want my dream no less, mind you, but my dads trying to scare me shitless. Its not exactly working, but I do wish I had my parents support.
Would you recommend becoming a pastry chef?

Hi, I am looking for scholarships, but I am looking for them pointed more towards being a pastry chef.
I have my serve safe, and soon to be prostart. If anyone knows of any good scholarships I would be eligible for can you please post?

I am in a 2 year culinary program that gives me 10 – 12 college credits.
I will be graduating this summer 2010.
I have been accepted into a baking college. It’s a 12-14 month program for a degree in pastry arts/pastry chef.
Also, I do have a handicap, so I’m also looking for those types of scholarships.
Any you know of would be great, and I’ve tried scholarships.com and a few other sites that my teachers have given me.

I have recently decided to become a pastry chef. I’m a complete beginner, and don’t know exactly where and how to start. I’ve loved baking my entire life, and truly love desserts!!! I just never gave it any serious thought to pursuing it as a career, until now. I’ve requested information from Le Cordon Bleu, for more info about the campus near me, so now I’m just waiting to hear from them. And, that’s as far as I’ve gotten.
I’d love to hear any inputs or advice any fellow chefs have on how you began your career, what the hardest part was, success stories, etc. What culinary school have you gone to & how have they made you successful? Do you own your own bakery now? How was that like starting up your own business? What were the biggest obstacles you’ve had to overcome? How did you come up with your bakery name?
I’d really appreciate any of your opinions & tips. Thanks so much!

I really like baking and cake decorating and would love to learn more, so I’m thinking about going to a culinary school to learn more and make a career out of it. So here are a couple of questions I have for those that are Pastry Chefs:

There is a used Blodgett pizza deck oven for sale in my area. I have been looking for a professional oven to bake artisan bread. This deck oven does not have any sort of steam injection system, which I require. Does anyone have any info. on whether it is possible to attach an independent steam generator to this type of deck oven? Does anyone have any experience with doing so, or with particular brands?

Well I’m 13 and im completly FASCINATED by food and cooking, especially pastry and general baking. Now what "sucks" is that im going to Highschool next year and they dont have home ec!! How can i improve and become a good chef or a pastry chef some day?
P.S- Is it possible to make "home made" fondont? I love to use it for cakes but i dont know how to make it (if there is a possible way) and where can i get fondont if i can’t make it?
